White truffles is a rather expensive food, often referred to as "white gold". They are sought after by catering professionals for its rich aroma and unique taste. However, they are among the most expensive products the earth produces. They are very difficult to grow, making them extremely rare in contrast to black truffles. It is a mushroom, it is often buried up to half a metre in the ground and for its hunting first pigs and later trained dogs were recruited. It usually thrives in places where there are, among others, oaks, shrubs, lindens, beeches and in an environment with alkaline (not acidic) soil, while it can coexist with the roots of trees or shrubs. It has a round shape and its size is between 2 and 7 cm - the larger ones are of course more rare and therefore more expensive food. There are currently about 80 truffle varieties on the planet, with main production and consumption countries Italy and France, while it is also grown in Spain, the Balkans, North America and New Zealand, being today a golden, alternative investment. in the agricultural sector.

The main categories are those of the white truffle (tuber borchii) which is the cheapest and has a milder aroma, the autumn black truffle (tuber uncinatum) and the winter black truffle which is the most expensive (tuber melanosporum). The best black truffle is also a very expensive food which is considered to come from the Dordogne region, in southwestern France and more specifically from Périgord. It has been characterised as a black queen, black pearl or culinary diamond.
